The Ultimate Vegan Hot Cocoa

Although I do love a coffee from time to time, my preferred morning drink is a big cuppa cocoa. Always has been, and probably always will be. The recipe has transformed with my diet over the years but I think this version is here to stay. I tend to have this straight away in the morning, then do yoga, then have breakfast. This drink is perfect as it is very filling but doesn’t cause a crash.
- 3 dates, pitted
- 1 1/2 Tbl cocoa powder
- 1 Tbl coconut oil or ghee (or half of each!)
- a good pinch of salt
- 1 cup/240 ml hot water
- Blend until totally smooth in a high speed blender.
- Sprinkle a touch more salt on top (if you’re like me) or drizzle with a little date syrup.
Replace the dates with a few tablespoons of honey or date syrup if you don’t have a high speed blender or if you are terrified of date chunks. (I think they taste like candy!)
